The Woinemer ORIGIN IBIS is a gin that doesn’t hide. It is sensually playful, charismatically tempting, and full of nuanced aromas that dance effortlessly between fruity, fresh, and spicy notes. A gin that provokes, surprises, and leaves a lasting impression.

We source our herbs from Senger Naturrohstoffe – it’s an experience every time, as each delivery brings a literal explosion of fragrance to our distillery. You can taste that exact quality in your glass later.

IBIS is best enjoyed with fresh fruit or frozen blueberries. You don’t need extra lemon – thanks to lemongrass and lime peel, the gin already carries its freshness within.

Production – London Dry at the highest level

IBIS is distilled as a London Dry Gin using the most complex and refined process. The juniper berries are macerated and then distilled several times together with finely balanced botanicals in the vapor basket of our copper still. Through the percolation process, rising alcohol vapor combines with the finest citrus, herb, and spice aromas.

Aroma & Taste

On the nose, IBIS is intense and persistent, with a warm depth. The first sip surprises with a delicate play of fresh citrus notes—soft, clear, and inviting. This is followed by a spicy intensity that lingers on the finish and provides lasting delight.
